Tomato Source Lycopene
Lycopene is a member of the carotenoid family, the red pigment found in tomatoes and other plants. Lycopene is one of the most abundant carotenoids in human blood and tissue.
Oxidative damage from free radicals is a proposed contributing factor in the development of cancer. Recent research has shown that lycopene is the most potent anti-oxidant of the entire carotenoid family, surpassing all currently known carotenoids, including beta-carotene.
One of the most abundant and common sources of lycopene is tomatoes. Including fresh tomatoes in one's diet, however, does not make large quantities of lycopene bio-available. Pureeing and heating tomatoes may increase bio-availability, but does not give one the convenience of a concentrated form.
